Pierogi a comforting treat during meatless days

If you’re Catholic and fasting most of Good Friday, there’s a Polish treat you can have that will fill you up at dinner that evening. Even if you aren’t Catholic, pierogi are a comforting treat to eat any time of year. With the changing demographics of the Elgin area and the northwest Chicago suburbs, such food is easier to find. In case you’ve never had them, pierogi are dumplings, similar to Chinese pot stickers, that can be stuffed with a variety of fillings. Typically they are boiled first until they float, then cooled before being pan fried in butter.
